How can I delete Game Center from the iPad?

Simply, you can't.

Like all of the core iPad applications (i.e. Mail, Safari, Messages, iPod, etc), these applications cannot be deleted from the iPad the way that downloaded applications can be.

If you want Game Center out of site, throw it in a folder or move it off to a separate page.
